BBB Maastricht is the horeca trade fair connecting Dutch and Belgian horeca professionals at MECC Maastricht from 9 to 11 October. Visitors can look forward to a varied exhibition floor with an inspiring competition programme and various theme squares. Besides a wide range of products and services, you will also find inspiring master classes, tastings and innovative product presentations. For the middle and high segment, the Folie Culinaire area offers a programme with international top chefs in cooperation with Euro-Toques Nederland and Gault&Millau, among others.
Wondering how to take your business to the next level? At Folie Culinaire, you will be inspired for three days with cooking and product presentations for and by (inter)national star chefs. A visit to Folie Culinaire offers a complete overview of new, special ingredients, exclusive wines and champagnes. At Folie Culinaire, all current trends in the higher segment in (non-)food, wine and other products and services are offered by some 50 leading exhibitors. In cooperation with Euro-Toques Nederland, Gault&Millau, Culinaire Saisonnier and Mastercooks of Belgium, a dazzling programme awaits next edition.
Chapeau Magazine also presents this year's Chef's Table by Gault&Millau where guests can enjoy dishes by top chefs such as Jermain de Rozario (Restaurant De Rozario*), Guido Braeken (Julemont**, Château Wittem) and Rob van de Bunt (De Leuf*). They will cook with the products of the exhibitors present. The success of the Chef's Table by Gault&Millau is so great every year that places are running short. The Culinaire Saisonnier demo kitchen will also host exclusive plant-based demonstrations this year. Here, the full focus is on sustainable and plant-based cooking. There is a lot going on in Culinaire Saisonnier's demo kitchen. The attending chefs are excited to travel to Maastricht and are looking forward to three dynamic days. Mastercooks of Belgium will delegate a Young Master and Mastercook to BBB Maastricht each day. Of course, there will again be an intensive collaboration with We´re Smart by Groentechef Frank Fol. Together with him, Culinaire Saisonnier brings the world's top chefs to BBB Maastricht.
Besides the competitions in the BBB Battle Area, a competition will take place at Folie Culinaire for the first time this year. On Wednesday 11 October, BBB Maastricht is organising the Palux Innovation Battle in collaboration with Euro-Toques Netherlands, Palux kitchens and Culinaire Saisonnier. During this competition, young talents will present a signature dish of Euro-Toques worthy products. These products meet the core values of Euro-Toques Nederland: high quality, honest products from the region and according to the seasons. Naturally, the dishes are traditionally prepared on site in the Culinaire Saisonnier demo kitchen. During the demonstration, the participants will talk about their signature dish, what they have done and what their restaurant stands for in consultation with the moderator, after which 1 talent will be declared the winner of the ETN-Palux Innovation Award 2023.
Tickle your taste buds at this year's Tasting Experience sessions at Folie Culinaire. Guillaume Coret of Fijn-Proeverij combines many products, sourced from the exhibitors, to create the ultimate taste experience. Guillaume Coret is a sommelier, lecturer at the Academy of Gastronomy and founder of Fijn-Proeverij. With great pleasure, Guillaume will curate, prepare and host the tastings. For three days, a maximum of five sessions each day and only room for 20 guests per session.
On Monday evening 9 October, BBB Maastricht, in cooperation with Chapeau Magazine and Vermaat Group, is organising the Limburg Culinary Gala for the fifth time. A special gastronomic evening full of entertainment. Between courses, the awards for 'Best Young Talent Kitchen' and 'Best Young Talent Service' will be presented, among others.
Three well-known two-star chefs from Limburg will take care of the starter, entremets and main course: Guido Braeken (Julemont**, Château Wittem), Ralf Berendsen (La Butte aux Bois**) and Hans van Wolde (Brut 172**). For dessert, renowned Belgian chef-patissier Roger van Damme (Het Gebaar*) is coming to Maastricht especially.
